Keto Chicken Fried What???

When I started Keto, my biggest concern, or fear of living without bread, pasta and all things Italian and holy, was a very big reality! So, you may ask yourself: “How can I have anything on a Keto diet that gives into the carb craving?” Enter, Almond Flour!

Using SuperFine Blanched Almond flour, not only in baking, but in “breaded” dishes, is THE savior of the holy need for carb replacement techniques when doing Keto.

For a basic “breading” use this recipe below! Use this breading, an egg wash and your favorite protein. Then fry on medium heat in your favorite Keto friendly oil (Avocado, Olive, Coconut). This will give you the comfort food feeling without exceeding your daily carbs-assuming you don’t eat the entire batch!!

I recently made Chicken Fried Cube Steaks (Top Sirloin that has been sliced to 1/4″ and tenderized by the butcher) with a sour cream sauce.

Here is what you need:

Keto Breading:

  • 1/2 cup Almond flour
  • 1/4 Cup grated Parmesan
  • 1/2 tsp each-Dried Parsley,Kosher Salt, Ground Black Pepper,Granulated Garlic,Paprika

Other Ingredients:

  • 4-6oz Cube Steaks
  • 2 Eggs for Egg wash
  • 2-4 Tbsp Oil for frying
  • 1/2 Cup Sour Cream
  • 1/4 Cup Heavy Cream
  • 1-2 Tbsp Fresh Chopped Parsley


Season the steaks with salt and pepper, be careful with the salt, as the breading has some.

Dredge each steak in the egg wash, then lightly in the breading. Be careful not to pat too much. This is a very fine flour so it is easily absorbed. Attempt to be very light handed with it.

In a pre-heated non stick or cast-iron skillet, place the steaks in the pan and fry about 2-3 minutes per side, until golden.

For a Sour Cream sauce simply use the leftover fond in the pan once the steaks are resting and add 1/3 to 1/2 Cup Sour Cream, 1/4 Cup Heavy Cream and whisk into the pan juices on a low heat. Add fresh parsley or other herbs you like! Season to taste! Eat!!
